Bartender Spotlight – Ash

One of the things that we think, and we hope you agree, makes us really special is not just the wonderful house we live in, the delectable cocktails we serve, the delicious food we dish up, or the events we host but actually our wonderful staff. They’re passionate about what they do and are here to make your visit with us just that little bit more wonderful. We want you to get to know them a bit better so we’re starting a series of bartender spotlights, and here’s the first one from the rather marvellous Ash…


What’s your role at The Milk Thistle?

I tend stick (bartend) at The Milk Thistle, bashing out yummy classic cocktails, scrummy in-house specialities and generally work to keep customers happy!

What’s your favourite thing about working at The Milk Thistle?

The relaxed, easy-going atmosphere that the bar has when it’s in full-flow. There’s something almost magical when the lights are low, with the gentle hum of chatter and the swing/jazz/mow town music playing in the background. I love how it can be so chilled out.

And your least favourite?

No least favourites I’m afraid! I’d like to drink more of our cocktails I guess, but that’s about it!

What do you like to do when you’re not serving us amazing beverages?

When I’m not at the bar, I’m usually either spending some quality time with my lovely husband, teaching people about alcohol or at music gigs! I really enjoy reading, drawing,cooking and visiting other bars to see what’s trending :)

What’s your favourite cocktail on The Milk Thistle menu at the moment?

To be honest, my favourite drink changes depending on my mood or who I’m with. Right now, I could really enjoy a Jamaican Sazerac. It’s a twist on a classic, made with Jamaican Rum, pineapple syrup, our house bitters blend and comes served up in an Absinthe rinsed glass. Delicious!! It’ll put some hairs on your chest!

If you could only drink one spirit for the rest of your life, what would it be and why?

Whisky!! I love all kinds of Whisky, be it Scotch, American, English, Thai, Indian etc. but a good old Islay Whisky would be perfecto. There’s something ever so special about it. My husband and I have holidayed up on Islay (an island in the Hebrides) numerous times, and I can’t even begin to explain how special it really is. For me, a great Whisky really invokes great memories, and that’s something amazing.

Who would your ideal customer be to sit at the end of the bar with and sink a few martinis? (Real life, fictional, famous-it can be anyone!)

My family, for sure. My parents have never had the chance at sitting at the bar whilst I’m working, so I think that would be super exciting! I’d love to be able to make them drinks that they enjoyed, that they would find memorable. My sister as well, because she’s an absolute riot! I’d hopefully have us all smashing back the Corpse Revivers before long!

If you were a cocktail what would you be and why?

Oooh, now that’s a tough one! Maybe a Mint Julep? It’s a refreshing mix of mint, sugar and Bourbon….so its got that easy-breezy, slightly sweet taste with a helluva kick. I’m not sure if it’s the cocktail I would be,or if its just the cocktail I’d LIKE to be!
